Jaime Perez is a protégé of Ferrán Adrià, often acclaimed "the most influential chef in the world" for his pioneering work at El Bulli in northern Spain. Perez became a leading chef in Adrià´s renowned 3-Michelin star restaurant, moving on to become Executive Head Chef at the one of Spain's most recognised and luxurious hotels, The Ritz Carlton Arts Hotel in Barcelona, before arriving in the Algarve. During his career, Jaime has also worked in collaboration with other giants in the business, such as Carlos Abellan, Sergi Arola, Pedro Subjiana and Oriol Balaguer, all of whom have influenced his style of cooking and left their mark in different ways.
As a result, Perez has developed a distinctive brand which has won rave reviews at Monte Rei, introducing new Mediterranean dishes and achieving a successful combination of Catalonian, Andalusian and Basque cuisine based on fresh ingredients combined to respect the original flavours, where spices are used to enhance the taste and not to hide it. |
